Vinegar vs Bleach: Which One Actually Disinfects?

The short answer

Bleach disinfects and vinegar does not. In Rutala's 2000 testing, vinegar achieved under a 3-log microbial reduction while bleach and other registered disinfectants achieved 5.6 to 8.2 log. But bleach is inactivated by dirt, must never meet an acid or ammonia, and Health Canada says not to use it on household mould.

Before anything else: never let bleach meet an acid

Vinegar is an acid. Bleach plus any acid produces chlorine gas. Bleach plus ammonia, which is in many glass cleaners, some floor cleaners and in urine, produces chloramine gas. This is not a fringe risk, it is the single most common serious household chemical injury, and Health Canada’s Healthy Home Guide states it plainly: “Never mix household chemical products together. Some mixtures, such as bleach and ammonia, can produce harmful gases.”

Chloramine exposure causes watery eyes, nausea, coughing, chest pain, shortness of breath and irritation of the throat, nose and lungs. Symptoms can develop after only a few breaths and can last up to 24 hours. Chlorine gas causes more severe and longer-lasting effects and may need medical treatment.

Three specific traps worth naming, because they catch people who are being careful:

  • Pouring bleach into a toilet bowl that has had an acidic descaling cleaner in it.
  • Bleaching a shower after using a vinegar or citric acid solution on the glass, without a thorough rinse in between.
  • Using bleach on a pet accident or a litter area. Urine is an ammonia source.

If a mixture has already happened and someone is coughing, get everyone including pets out of the room, open windows and doors from outside the space if you can do it without lingering, and call the BC Drug and Poison Information Centre or 911. Do not go back in to “finish the job”. The rest of this article is about which product to reach for, and the answer is never both.

Which one actually disinfects?

Bleach does. Vinegar does not, at the concentrations and contact times anyone uses at home.

The cleanest head-to-head measurement is still Rutala and colleagues (2000), which tested home disinfectants alongside “natural products” against potential human pathogens.

Against poliovirus, only Clorox and the Lysol disinfectant achieved more than a 3-log reduction. Translated out of log units: 3-log is 99.9%, 5-log is 99.999%. Canada requires a food-contact sanitizer with no disinfectant claim to demonstrate 99.9% within 5 minutes, and a product claiming both disinfectant and sanitizer use to demonstrate 99.999% in 30 seconds at 20°C. Vinegar is below the lower of those two bars.

Be careful with the round numbers that circulate about vinegar. You will see “vinegar removes 80% of germs” quoted widely with no traceable study behind it. The measured figures are the log reductions above, and they are the ones we will stand behind.

Vinegar is not inert, though. Cortesia and colleagues (2014) found 6% acetic acid held for 30 minutes reduced M. tuberculosis from about 10^8 to undetectable. That is a real result, useful in low-resource TB laboratories. It is also 6% acid and half an hour of wet contact, not a 5% household bottle and a wipe.

If bleach wins on kill, why not use it everywhere?

Because disinfection is only one job, and bleach is bad at several of the others.

It is inactivated by dirt. Bagattini and colleagues (2015) tested 5% sodium hypochlorite in the presence of organic matter and watched it drop to a 4-log reduction for bacteria and only a 2-log reduction for fungi at 7 minutes. Steam under the same soiled conditions was unaffected. Practical consequence: bleach applied to a surface that has not been cleaned first is doing much less than the label implies.

It is the wrong tool on mould. Health Canada’s guidance carries the instruction in capitals: “DO NOT USE BLEACH TO CLEAN UP MOULD”. Its advice is to scrub washable surfaces with an unscented soap solution, and walls with baking soda or a small amount of unscented soap solution. Bleach is a water solution of an ion. On porous material the water soaks in while the hypochlorite largely stays at the surface, so the visible mould goes colourless while hyphae survive below in the moisture you just added.

It has a documented respiratory and household cost. Casas and colleagues (2015) studied more than 9,000 children aged 6 to 12 across three countries and found homes using bleach at least weekly were associated with 18% more infections overall, 35% more recurrent tonsillitis and 20% more influenza. That study is cross-sectional, so it shows association rather than cause, and the effect sizes are modest. It is a reason for restraint, not for alarm.

It damages things. Bleach degrades many finishes and fabrics, and repeated use pits and dulls stainless steel.

Which should you use where?

Match the tool to the surface and the soil. This is what we actually do on a job.

Note what is missing from every row: there is no job where the answer is “both”. If you have used an acid on a surface, that surface is off limits for bleach until it has been thoroughly rinsed and dried.

Is there a middle option?

Yes, and it is the one most people never hear about. Disinfection in Canada is defined by the claim and the testing, not by the chemistry, so several actives that sound gentle are legitimate disinfectant actives in registered products: hydrogen peroxide, citric acid, lactic acid, caprylic acid, thymol, ethanol and isopropanol. Formulated hydrogen peroxide products hold Health Canada DINs at concentrations as low as 0.5% w/w, because the surfactants and stabilisers around the peroxide are doing much of the work.

What that means for a household cupboard:

  • Keep vinegar or citric acid for descaling, and keep it away from stone and rubber.
  • Keep detergent and microfibre for everything routine, which is most of the house.
  • Keep one DIN-carrying disinfectant for the handful of situations that genuinely call for it, and read its contact time. Most people wipe it off long before it has worked.
  • You do not need bleach at all unless you have a specific reason for it.

Does vinegar kill 99.9% of germs?

No, and be careful with percentages you see online. The peer-reviewed measurement is Rutala 2000, where vinegar eliminated fewer than 3 log10 of S. aureus and E. coli, roughly 1 log10 at 30 seconds. A 3-log reduction is 99.9%, so vinegar sits below that at real contact times, while a registered disinfectant must hit 99.999% in 30 seconds.

Can I mix vinegar and bleach to make a stronger cleaner?

No. Bleach plus any acid produces chlorine gas. Symptoms include watery eyes, coughing, chest pain and shortness of breath, and they can be severe and long-lasting. Health Canada's instruction is blunt: never mix household chemical products together. Never pour bleach into a toilet bowl that has had an acidic descaler in it.

Is bleach good for cleaning mould?

Health Canada says no, in capital letters: DO NOT USE BLEACH TO CLEAN UP MOULD. Its guidance is to clean small areas with dish soap or baking soda and water. On porous material the water carries into the substrate while the hypochlorite ion stays near the surface, so the mould looks gone and grows back into the moisture you just added.

What should I use on a kitchen counter after raw chicken?

Clean first with detergent and a cloth to remove the soil, then apply a product carrying a Health Canada DIN for the contact time printed on its label. Bleach solution qualifies. So do several registered hydrogen peroxide, lactic acid and citric acid formulations if you would rather not use chlorine. Vinegar does not.
